Let me start by telling you that I hate to cook. It’s not that I don’t know how ~ I actually pretty okay at it ~ can follow a recipe and all that. I just don’t enjoy it. At all. Now baking? That’s another story…
What’s the difference you say?
I don’t know ~ there’s just a difference. Don’t you think? Well, I’ll talk about baking in another post ~ this one’s about my nemesis. Cooking.
To prove to you my hatred for cooking, I had even started a blog years ago that was titled “Do You Hate to Cook?”
Yeah, I’m pretty sure that I don’t like it. It’s weird too because my mom LOVES it and she’s super good at it. Oh well, I guess it skips a generation.
Anyway, I have mouths to feed ~ so for years and years I’ve looked at many different cookbooks, and the like, trying to figure out something that would speak to me. Something that would click and I would be like ~ yeah, I can do that. That would be
The first person to do that for me was Sam the cooking guy.
I caught his show on tv one day and was hooked. Here’s this guy ~ a regular dude ~ in his own kitchen, in his own clothes, with his own dogs and he was cookin’ up some real food that looked delicious. Quickly.
It’s all about quick and simple, people.
He made me laugh and he inspired me, so I bought one of his cookbooks. Let me tell you, I have not tried a recipe of his that I don’t like. I’ll share one of my absolute favorites of Sam’s with you from his book Awesome Recipes & Kitchen Shortcuts. It’s the Pulled Chicken Sandwich.
Now before I give you the recipe, here’s a little tip about chicken that I learned from Sam Zien. He buys a rotisserie chicken or two at the grocery store and uses that in his recipes all week. So you don’t have to prepare the chicken, just shred it up!
Pulled Chicken Sandwich ~ Serves 6
3 C shredded cooked chicken
3/4 C BBQ sauce
2 T white vinegar
6 good crusty rolls
2 C “ready-to-go” coleslaw mix with dressing ~ prepared
18 frozen onion rings, cooked
In a small bowl, mix the chicken, BBQ sauce, and vinegar together and ser aside.
Cut open the rolls, add some of the chicken mixture and coleslaw, then top each with a few of the warm onion rings ~ it’s messy, but you’re gonna love it.
FYI: I used whole grain rolls and I didn’t mix the coleslaw mix with dressing ~ I used broccoli slaw. The best onion rings to use are Alexia’s Panko Breaded Onion Rings. Yum.
Oh, and let me tell you a little secret that I learned from Sam. You know how it takes forever to cook onion rings? Well, just zap them in the microwave and put them under the broiler for a minute or two. The result? Crisp onion rings ~ quick!
And the sandwich? De-LISH!
I’m not gonna tell you that I love cooking now ~ I don’t. BUT I don’t entirely hate it all the time either, thanks for a regular guy named Sam.
